Ingredients
-
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
-
1/2 cup creamy peanut butter
-
1/4 cup soy sauce (low sodium recommended)
-
2 tablespoons honey or maple syrup
-
2 tablespoons rice vinegar
-
2 cloves garlic, minced
-
1 teaspoon ginger, minced
-
1 teaspoon sesame oil
-
1/4 teaspoon red pepper flakes (adjust to taste)
-
1 cup broccoli florets (optional)
-
Cooked rice or noodles, for serving

2 green onions, chopped, for garnish

1 tablespoon sesame seeds, for garnish
Instructions
-
In a medium bowl, whisk together the peanut butter, soy sauce, honey or maple syrup, rice vinegar, garlic, ginger, sesame oil, and red pepper flakes until smooth.
-
Heat a large skillet or wok over medium-high heat.
-
Add the chicken to the skillet and cook until browned and cooked through, about 6-8 minutes. Ensure not to overcrowd the pan; cook in batches if needed.
-
Pour the peanut butter sauce over the chicken and stir to coat evenly.

If adding broccoli, add the florets to the skillet and cook for another 3-5 minutes, or until tender-crisp.
-
Serve immediately over cooked rice or noodles.
-
Garnish with chopped green onions and sesame seeds.
Notes
Variations: For spicier peanut butter chicken, add a tablespoon of sriracha or chili garlic sauce to the sauce. For a sweeter version, add an extra tablespoon of honey or maple syrup. You can also add other vegetables like bell peppers, snap peas, or carrots.
Tips: Don’t overcook the chicken. Use a meat thermometer to ensure it reaches an internal temperature of 165°F (74°C). Adjust the sauce consistency by adding a tablespoon of water if it is too thick.
Allergies/Intolerances: This recipe contains peanuts and soy. Substitute almond butter or sunflower seed butter for a peanut-free version. Use tamari instead of soy sauce for a gluten-free option.
Taste Preferences: Adjust the amount of red pepper flakes to control the heat level. Taste the sauce before adding it to the chicken and adjust the sweetness or saltiness to your liking.
Serving: Consider serving with a side of Cucumber or Tomato Salad for a refreshing pairing
